Schubert Named ACF Pastry Chef of the Year

Stephan Schubert, adjunct instructor in culinary arts at St. Louis Community College, has been named the American Culinary Federation’s Pastry Chef of the Year.

Schubert, the executive pastry chef at River City Casino & Hotel in St. Louis, earned the title and $5,000 after winning a competition during the recent ACF National Convention in Kansas City, Mo.

The ACF Pastry Chef of the Year Award, sponsored by Plugrá® European-Style Butter, was established in 2004 to recognize a pastry chef who displays a passion for the craft, has an accomplished reputation in the pastry field and has helped educate others by sharing skills and knowledge.

Four finalists from each ACF Region competed at the national convention after first being nominated by colleagues and then winning their respective regional competition.

Pastry chefs had two and a half hours to prepare and serve three items: a cold contemporary plated dessert, a sugar cookie and a showpiece that is at least two feet tall, representing the designated theme, The Wizard of Oz. A panel of ACF-approved judges determined the winner.

Schubert’s winning menu included:

  • Milk Chocolate Orange Cookie -- orange sablé with Grand Marnier milk chocolate filling, a chocolate disk and passion fruit/mango pâte de fruits
  • Modern Twist on a Classic Tale -- eclair with vanilla cream, cherry sphere, bean to bar strip, chocolate filigree, pistachio snow, raspberry crumbs, passion fruit sauce, savory tuile, pistachio matcha ice cream and green cardamom meringue
  • The Dark Side of The Wizard of Oz -- Wizard of Oz-themed chocolate depicting a molded chocolate tornado touching down on the yellow brick road

At River City Casino & Hotel, Schubert oversees the day-to-day bakery operations and a staff of more than 30 employees. He also has served as the executive pastry chef for Cunard Cruise Line’s Royal Viking Sun and Vistafjord; assistant pastry chef at the Ritz-Carlton, Dearborn, Mich.; and Caesars Palace, Las Vegas. He is a member of Chefs de Cuisine Association of St. Louis Inc.

Schubert resides in St. Charles, Mo.
