Shiller to Compete in Food Network's "Cupcake Wars"

Chef Casey Shiller, coordinator of baking and pastry arts at St. Louis Community College-Forest Park, will team with Dana Holland of Jilly’s Cupcake Bar & Café to compete tonight (June 28) in the third episode of the third season of Food Network’s "Cupcake Wars."

Shiller and Holland will compete against three other teams in a nationally-televised baking battle for a $10,000 grand prize. Jilly’s Cupcake Bar & Café is the first St. Louis-based business to appear on "Cupcake Wars," as well as the first team in the show’s history to represent a business from the state of Missouri.

The episode is titled "The Final Frontier," an outer space theme, where bakers compete to have their tasty treats front and center at a VIP party honoring the first man in space.

Shiller also serves as director of pastry and baking at Jilly’s. At Forest Park, he teaches classes in baking, pastry, chocolates and confectionary art. Shiller was named Forest Park's Teacher of the Year in 2010. This year, he received the Missouri Community College Association’s Excellence in Teaching Award and the National Institute of Staff and Organizational Development’s Excellence Award in 2011. Shiller graduated with honors from Johnson & Wales University in Providence, R.I., with a bachelor's degree in baking and pastry arts.

His storied culinary career includes stints at the Trump Plaza Hotel-Casino, Trump Taj Mahal Hotel-Casino and the Trump World’s Fair Hotel-Casino in Atlantic City, N.J.; the Sagamore Resort near Lake George, N.Y.; the Ritz-Carlton Amelia Island near Jacksonville, Fla.; Ristorante Cantare, in Chicago, Ill.; the Westchester Country Club in Rye, N.Y., and the Boeing Leadership Center in St. Louis.

Holland brings nearly 30 years of culinary experience to Cupcake Wars, most recently as  executive chef at Jilly’s Cupcake Bar & Café, a title he has held since 2007. Prior to his role at Jilly’s, Holland spent six years as owner and chef of Babalu’s & Babalu’s Snack Shack, a full-service Pan Latin restaurant in St. Louis. Holland co-founded Culinary Software Services, a software solutions provider for restaurant and foodservice operations in Boulder, Colorado, and most recently, founded Sun Drenched Foods, a line of sauces and spices distributed locally in St. Louis. Holland began his culinary path at the University of Missouri-Columbia, where he received a bachelor's degree in food science and nutrition. He also attended Johnson & Wales College.

Each week on "Cupcake Wars," four of the country’s top cupcake bakers face off in three elimination challenges until only one decorator remains. The sweet prize is $10,000 and the opportunity to showcase their cupcakes at the winning gig. Candace Nelson, owner of Sprinkles Cupcakes, and Florian Bellanger, chef and co-owner of online macaroon company MadMac, serve as permanent judges with a third rotating judge each week.
